Fish with Feta and Veggies

Cosy supper for the cold dark days

Ingredients

  • White Fish
  • Feta
  • Tomatoes
  • Coriander
  • Parsley
  • Fennel seeds
  • Garlic Cloves
  • Lemon
  • Cherry Tomatoes
  • Broccolini
  • Paprika
  • Potatoes

Steps

  1. Dice the tomatoes.
  2. Put the white fish in a baking tray with the broccolini and potatoes.
  3. Add fennel seeds and drizzle with olive oil. Place in the oven.
  4. Make pesto! Chop and mix (with a mixer) coriander and/or parsley with lemon juice and some salt.
  5. Get the fish out of the oven and "drizzle" with pieces of feta
  6. Add the tomatoes and put the pesto on top of the fish. Place back in the oven until fish is ready.
