Lentil Stew

Cosy supper for the cold dark days

Ingredients

  • Lentils (green or brown)
  • Yogurt
  • Tomatoes
  • 1 Carrots
  • 1 Onion
  • 1 Ginger
  • Garlic (optional)
  • 1 Lime
  • Coriander
  • Paprika
  • Cumin
  • Coriander Powder
  • Pumpkin
  • Salt
  • Pepper
  • Olive Oil

Steps

  1. Dice the onion and the carrot.
  2. Chop the pumpkin into not-too-thick pieces.
  3. Place the onion in a pot with herbs (paprika, cumin, coriander powder, ginger, garlic). Let it cook for a few minutes.
  4. Put the pumpkin in the oven with olive oil, salt and pepper.
  5. Add the carrot pieces and the lentils (uncooked), stir and add water.
  6. Stir regularly and add water if needed, until lentils are ready.
  7. Serve the lentils with the pumpkin, yogurt, lime, coriander… anything you like!

Notes

Instead of the pumpkin, you may serve it with chicken or avocado.
